Roasted Salmon with Chargrilled Courgettes

A great post-workout snack that balances fantastic flavours whilst being quick and easy to prepare. Don't worry if you don't have a grill pan, you can use a normal grill or even a toaster to prepare this easy going fix!


  • 2 Salmon Fillets
  • 2 Courgettes
  • 1 Lemon
  • Olive Oil
  • Salt & Pepper


Starting with your courgettes, peel lengthways into strips. Only peel down to the core, as you can save the core and use it as the base for a vegetable soup or something similar. Preheat a chargrill pan and cook the courgette strips until you can see the grill marks. I find it's best to cook them in batches so that each one is in contact with the pan. Once they're charred, drizzle with olive oil, lemon zest, and salt and pepper. 

For the salmon, place on greaseproof paper on a baking tray. Drizzle with olive oil and season with salt and pepper to fire up your tastebuds. Roast in a preheated oven for about 5-6 minutes.
