Rustic Tomato, Mascarpone and Basil Soup

Fantastic flavours to warm your soul and fire up your spirits can be found in this rustic soup recipe. The method sees you creating the soup from scratch - so you can be safe in the knowledge only goodness is going into your body.
- 2 Red onions
- 2 Garlic Cloves
- 1 Vegetable stock pot
- 2 Tins of chopped tomatoes
- 1 Pudding spoon of mascarpone
- 1 Small bunch of basil
- Olive oil
- Salt & pepper
Finely slice your onions and chop your garlic to release the flavours, then cook them gently in a healthy dose of olive until until they're soft, stirring occasionally. The trick here is to cook them over a low heat and be patient - it can sometimes take 20 minutes or so. Add a splash of water if they are starting to catch.
Once they're soft, add the vegetable stock cube, chopped tomatoes, half a tomato tin of water, and salt and pepper to taste. Let it simmer until the flavours and aromas are starting to awaken and the soup is starting to thicken.
At this point, stir in the mascarpone and chopped basil. Ladle into bowls and drizzle with olive oil.

I don’t like diets or fasts, but just try to apply a bit of common sense. Nothing is off limits, but I do pay attention to what I’m eating ands its usually easy to tell if something is doing more harm than good. Moderation is the key!
Life can be super busy so for me its all about being able to prepare food which is delicious, uncomplicated, and most importantly quick, but without compromising on health.
